Saving his Own Bacon
Cudahy, for obvious reasons, is synonymous with bacon. Patrick Cudahy was a shrewd meat packing tycoon with particular tastes in his personal supply of bacon. He was also known as a perfectionist and demanding employer. Shortly after the Cudahy meat processing facility on what is now Layton Ave. opened in the 1890s, Cudahy was said to become enraged with an employee, a fellow Irishman fresh from the shores of the Emerald Isle who had been haunting places rumoured to serve extra-potent whiskey. The man had arrived at the plant drunk and incompetent. Cudahy, who had fought the opening of any bars and taverns in the town which bore his name, dragged the man to his office and fumed for the rest of the day. Looking back, no one recalled ever seeing the drunk leave that day. The next morning Patrick Cudahy was surprisingly jovial. Employees in the smoke house that morning were surprised to find one of the smokers still hot, as though had just been used.
